A bit of detective work, some lateral thinking and a load of development work has gone into our
rare breed, eco-feed, sustainable Merguez sausages.
There is a long tradition behind the Merguez mix. It has been around since Byzantine times, but
the recipe was first recorded in an anonymous cookbook from the 13th century 1. The passage
reads:

Inspired by the rich, unique flavour of pomegranate and developed from a firm favourite of the Ottoman imperial court, we have great pleasure to bring you the next sausage in our gourmet sustainable range.
There’s nothing new about pairing meat with fruit, which has been done since time immemorial, but, balancing delicately-flavoured rare breed* lamb with pomegranate and putting it in a casing took a bit of research, kitchen alchemy and perseverance!

Our gourmet range of sausages are produced under licence by Mark Hurds Butchers Limited in Weobley, Herefordshire. All our meat comes from priority, at risk rare breeds, free-range and finished with certified GMO-free and soy-free eco-feed in managed conservation flocks.
